Cinnamon Honey Greek Yogurt Smoothie

 This recipe is a good way of snacking and watching your blood sugar levels until your next meal. This is a recipe that AI found for me online because I had purchased First Street Greek Yogurt which turned out to grainy, chalky. You'll note the mention of the high-speed blender. I have a Nutribullet, that helped cut right through the graininess. If you do not have a high speed blender, you might want to consider finding a smoother Greek yogurt. 

Prep time: 3 minutes | Servings: 1 | Glycemic Impact: Moderately Controlled (Keep sipping slowly to prevent a rapid spike from the honey).
Ingredients:
  • 1 cup Thick and grainy Greek yogurt
  • 1 tbsp 100% pure honey (Acts as a natural emulsifier to bind the liquid and dairy).
  • ½ tsp Ground cinnamon (Your natural insulin-sensitizer to help blunt the honey's sugar impact).
  • ½ cup Unsweetened almond milk OR cold water (The crucial fourth ingredient needed to give the blender blades enough fluid to vortex).
  • One pump of sugar free syrup. (Optional.  I used brown sugar cinnamon.)
  • 3–4 cubes Ice (Optional, for a chilled, milkshake-like thickness).
Instructions:
  1. Layer the Blender: Pour your almond milk (or cold water) into your high-speed blender first, followed by the thick Greek yogurt. This ensures the blades don't jam.
  2. Add the Aromatics: Drizzle in the honey and add the ground cinnamon directly over the yogurt. Drop in your ice cubes if you are using them.
  3. The High-Speed Liquify Step: Secure the lid and start your blender on a low speed for 10 seconds to combine the ingredients. Then, ramp it up to maximum high speed for a full 60 to 90 seconds.
  4. Check the Texture: The high velocity does two things: it shears the grainy dairy solids apart and warms up the proteins just enough to seamlessly bond with the liquid, completely erasing that chalky mouthfeel.

Abuela Maria's Ensalada de Atun

I remember when I was a child that my family in Costa Rica would make the most delicious food. From her simple French fry style potatoes to her rice and beans, meals were always so satisfying. I am watching my carb intake so I squeezed what I could out of my memory. Here is what I could remember. I made this salad, and it was delicious.

📋 Abuelita's Costa Rican Ensalada de Atún (Tuna Salad)
Prep time: 10 minutes | Servings: 1-2 | Glycemic Impact: Exceptionally Low
Ingredients:
  • 1 can (5 oz) Tuna in water, drained
  • 1 tbsp + 1 tsp Mayonnaise
  • ¼ cup White onion, finely chopped
  • 1 tbsp Fresh cilantro, finely chopped
  • To taste Freshly squeezed lemon juice
  • To taste Celery salt and black pepper
  • 4–5 large Crisp lettuce leaves, washed and dried
  • Optional Abuelita Twists: 1 tbsp of drained capers OR chopped green olives
Instructions:
  1. Prep the Tuna: Open the can of tuna and drain the water completely. Flake the tuna into a medium mixing bowl using a fork.
  2. Combine the Aromatics: Add the finely chopped white onion, fresh cilantro, and capers or green olives (if using) directly into the bowl.
  3. Bind and Season: Add the mayonnaise, celery salt, black pepper, and fresh lemon juice to the mixture.
  4. Mix Thoroughly: Stir all the ingredients together with a fork until the tuna is well-coated and the salad holds together.
  5. Assemble the Wraps: Spoon the Ensalada de Atún evenly into the centers of your washed lettuce leaves. Roll or fold them up into tight, crisp wraps.
